Any, even the slightest, stains are clearly visible on it, and it is possible to bleach a monochromatic white fabric with the help of usual chlorine. But why then modern surgeons do not wear white coats?

Surgeons wear blue or green robes for a reason. It's all about the device of human vision.

Green — the most restful color for our eyes. It helps to relax and focus on a specific action, while red is a clear irritant. And irritability is simply unacceptable during complex multi-hour operations. Yes, and the crystal white color can momentarily blind the doctor, who for a long time concentrated on dark colors.
